All About Sauces

Sauces or sauces come from the Latin word salsas which means salted. Sauces are hot or cold liquid or semi-liquid mixtures that are added to meat, poultry, fish, vegetables, and desserts to add moisture or richness, garnish or improve appearance, and in some cases nutritional value, but most importantly, flavor.
A sauce is an aromatic, flavorful, nutritious liquid (or semi-liquid) that forms one of the essential parts of a dish, adding to the taste, moisture, appearance, and colour of the dish.
The sauce may be thick or thin, and it may be drained or not, with visible ingredients that may be served with a dish hot or cold, as part of the dish or separately as an accompaniment.

Sauce Ingredients:

Basic sauces consist mainly of three components: a liquid, which determines the consistency of the sauce; a thickening agent; and flavour and seasoning. Sauces can be classified in several ways:
  • Depending on the warm or cold temperature.
  • With subtle flavor.
  • aftertaste by acidity.
  • With sweetness.
  • By color.
  • By base neutral or flesh.
